WHAT IT TILMOK
Tilmok is a Bicolano coined word “tumok” or “tinumok”.
Chef Impling’s Tilmok is made up of “tinumok” or shredded coconut meat combined with Igatan meat (fresh water shrimp) locally found in San Miguel, Catanduanes. Garnishing is then added and mixed thoroughly. Then the mixture is put into hagikhik leaves, for longer shelf life, then steamed.
- 1kl tinumok Igatan shrimp
- 10 young coconut
- 4 medium sized onion
- 12 cloves of garlic
- 2 sili haba (add more depends on how spicy you want it to be)
- pinch of pepper
- pinch of salt
- 2 Tbsp of grated ginger
- few pieces of chopped oregano leaves
- a few arigbubuhay leaves (native mint leaves only found in tropical countries like the Philippines)
