Ingredients for the Rice Cake:
- 10kgs glutenous rice
- 1/4 kg moringa leaves
- 1 Tbsp salt
- 2 cups water
Mix all the ingredients. Then, extract the juice from the moringa leaves. Now, pour the extracted juice into a porous or perforated device or material in order to separate out any solid matter. Next, combine the moringa juice to the glutenous rice.
Ingredients for the BANYAR (caramelized coconut sauce):
- 12 kgs grated coconut
- 15 cups water
- 2 1/2 kg white sugar
- 3 Tbsp Anis
- 10 pcs pandan leaves
Mix grated coconut and water. Knead it thoroughly until the milk comes out. Now, pour the extracted coconut milk into a porous or perforated device or material in order to separate out any solid matter. Add the sugar and pandan leaves and simmer over medium heat. Stir until milk thickens.
While waiting for the coconut milk to thicken, mix the Anis and 2 cups of Coconut milk until it sets and thickens, use a sieve to strain out any solid matter then add this to the Banyar and mix well until all ingredients are blended together and sauce caramelizes.
Banana (Leaf) wrap
- 160 pcs banana leaves cleaned and cut into 8.5 x 11 inches
- 160 pcs banana leaves cleaned and cut into 4 x 6 inches
- 160 pcs banana leaves cleaned and cut into 2.5 x 3 inches
After banana leaves are cut into desired sizes, quickly expose the leaves to fire to sterilize and make it shiny and soft for easy manipulation.
